Oprah is a name known across the world. She represents strength, beauty and character. During her Australian Tour late 2010, she attracted many well known celebrities to promote Australia and all it has to offer.

Curtis Stone, a well known Australian Chef joined Oprah on Hamilton Island, Whitehaven Beach cooking a beach BBQ and seafood delight for almost 100 guests. Hamilton Island is a beautiful and glamorous Queensland destination, with the best of Queensland Seafood Produce. Together they enjoyed a fun afternoon on the beach with friends and great food.

If you have seen the footage, you will have seen a purpose built ice bar and a diverse and abundant range of local Seafood; king prawns, oysters, lobster, red claw crayfish and lobster. This really set my tastebuds is overdrive with the quality, presentation and appreciation that went into cooking with fresh local produce.

Learn To Make Seafood Salad

Seafood salad are varied in types, ranging from exotic Thai to the classic Crab Louis. It is not difficult to make this kind of salad. The fresh and sweet flavor of the seafood is highlighted. The most significant factors are light cooking and dressing which complements the seafood.


It is your choice whether you want to focus on a single type of seafood in your salad or if you want to combine several types. A shrimp salad, for example, is simple and elegant. Likewise, a seafood salad containing shrimp, fish, crab, mussels, and scallops is delicious and can make up an entire feast.


Pair your seafood with appropriate greens. Add some iceberg lettuce for a little crunch. Leaf lettuce adds nutrition and color. The different flavors of leaf lettuce also complement your seafood. For robust seafood salads, use romaine and butter lettuces. Spinach works well when you want to add more flavor, as do spicy greens like arugula and mizuna. For a light salad, you can also mix in wild greens like baby dandelion leaves, chickweed, and miner’s lettuce.

Recipe for Spicy Seafood Salad


This light and refreshingly spicy salad is simple to throw together.


What You Need

1/2 pound medium shrimp (31-40 per pound), shelled, deveined
1/2 pound bay scallops, rinsed
1 ripe mango
1/2 cup salad oil
1/4 cup lime juice
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 garlic clove, peeled
1/2 teaspoon hot sauce, or to taste
1/2 teaspoon salt, or to taste
1 ripe avocado
3-1/2 quarts baby lettuce leaves, rinsed

How to Make It

Boil 3 quarts of water in a 6 quart sauce pan over high heat. Add shrimp and let them cook for 1 minute. Add the scallops and cover tightly. Remove the pan from the heat. Let the seafood stand until the shrimp and scallops are barely opaque but still moist looking in the center. This takes about 2 or 3 minutes. Drain and rinse the seafood in cold water to cool.


Peel the mango and remove the pit. Slice it lengthwise in 1/2 inch slices. Set aside. Chop the smaller mango pieces and put them in a food processor or blender with the oil, cumin, lime juice, ginger, cinnamon, and garlic. Process until smooth. Add 1/2 teaspoon hot sauce and 1/2 teaspoon salt and taste. Add more if desired.


Peel the avocado and remove the pit. Slice into 1/2 inch pieces lengthwise.


In a large salad bowl, gently mix the seafood, mango dressing, salad mix and mango slices. Garnish with avocado slices. Serve immediately.

How to cook Seafood Wrap Recipe? This recipe is prepared with Mediterranean Salsa. This dish will transport you to the Mediterranean. Large tomatoes have seeds that you may want to remove before chopping, so I use grape or cherry tomatoes instead, to avoid seeding. Though mango isn’t Mediterranean, it complements the other salsa ingredients nicely and provides just the right touch of sweetness to balance the acidity in the tomatoes and olives.. Here are ingredients and easy directions:




4 orange roughy, red snapper, or tilapia fillets (about 4 ounces each, no more than 1 inch thick)
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil, divided
2 tablespoons fresh lemon juice
1/4 cup chopped fresh thyme or 2 teaspoons dried 8 thin prosciutto slices


1 whole mango, peeled, seeded, finely chopped
1/2 cup chopped grape or cherry tomatoes
1/4 cup chopped kalamata olives
1/4 cup finely chopped red onion
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh oregano
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper



Make the fish: Earlier in the day or the night before, sprinkle fillets with salt and pepper and drizzle with 2 tablespoons of the oil and lemon juice. Press thyme onto top of each fillet. Wrap each fillet in 2 overlapping slices of prosciutto and place seam side down on a plate. Wrap plate with aluminum foil and refrigerate. Proceed to next step.
Place a rack in the middle of the oven. Preheat the oven to 375°F. In a heavy-duty ovenproof skillet, heat the remaining tablespoon of oil over medium heat. Add prosciutto-wrapped fillets, seam side down, and cook until prosciutto is browned, about 1 minute. Gently turn and cook remaining side until browned.
Cover skillet with lid and roast in oven to desired degree of doneness about 8 to 10 minutes, depending on the thickness of the fish or until the crumbs are golden and the fish is just barely opaque when cut in the thickest part or flakes easily with a fork.
While the fish is roasting, make the salsa: In a small bowl, combine all salsa ingredients and toss gently until well blended. Hold at room temperature.
Remove pan from oven, using hot mitts on handle and lid, and let stand 5 minutes. Serve immediately with 1/4 of the salsa on each fillet.

Makes 4 servings.
